• 1/2 cup butter or margarine
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, firmly packed
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1-1/2 cup all purpose flour
  • 1/2 teaspoon  baking soda
  • 1/2 teaspoon salt
  • 15 small (about 1-inch) peanut butter cup candies, sliced in half crosswise


Beat shortening until creamy. Add sugar gradually and beat thoroughly. Beat in egg, then vanilla. Sift together flour, soda and salt to add to creamy mixture. Form into 1-1/4 inch balls and place on greased cookie sheets; flatten slightly. Press one peanut butter cup candy half in center of each cookie, peanut butter side up. Bake in moderate over (375 F.) about 10 to 12 minutes. Cool on wire racks. Makes 2-1/2 dozen.
