  • 2 acorn squash
  • 2 tablespoon butter
  • 2 cup minced baked ham (about 3/4-lb.)
  • 2 tablespoon firmly packed light brown sugar
  • 1 tablespoon  grated orange peel
  • 1/4 cup orange juice
  • 1 teaspoon salt
  • 1 cup roasted peanuts, chopped
  • 1-1/2 tablespoon melted butter
  • 1/4 cup chopped parsley


Preheat oven to 350 degrees. Halve squash and remove seeds. Place squash,cut side down,on greased baking pan and bake about 45 minutes or until tender. Scoop pulp out of squash into a mixing bowl leaving a thin shell. Saute ham and onion in butter and stir into squash along with brown sugar, orange peel, juice, salt and roasted peanuts. Bake 20 30 minutes in 350 degree preheated oven or until heated through.Garnish with chopped parsley and whole peanuts. Makes 4 servings.
