Use fully ripened tomatoes. Wash and cut in half. Lightly brush outer skin with oil or spray with vegetable spray. Place cut side up, in a baking dish. Sprinkle cut side with salt; set aside. In a small bowl combine cheese, bread crumbs, peanuts, melted margarine, basil and cayenne pepper. Blend. Spoon approximately 1 heaping tablespoon cheese mixture on top of each tomato. Bake in preheated 350 F. oven for about 15 minutes. Makes 8 servings.
