Mississippi Mud Cakes
Ingredients:
- 1 cup butter or margarine (2 sticks)
- 2 cup granulated sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1/2 cup coco
- 1-1/2 cup all purpose flour
- 1/8 teaspoon salt (omit if peanuts are salted)
- 1-1/2 cup chopped peanuts
- 2 cup miniature marshmallows
Directions:
In a large bowl, cream butter and sugar, beat until light and fluffy. Add eggs one at a time beating well after each addition. Stir in vanilla. In a separate container, combine cocoa, flour, salt and peanuts. Add gradually (but quickly) to butter-sugar-egg mixture. Spoon batter into a greased 13x9x2-inch pan. Bake in a preheated 350 F. oven for 35 to 40 minutes (or until cake tester comes out clean). Spread marshmallows over warm cake. Makes 36 servings
