Peanut No-Bake FruitCake
Ingredients:
- 2/3 cup fresh orange juice
- 2/3 cup bourbon
- 1/4 cup dark molasses
- 2 tablespoon shredded orange peel
- 2 cup dark seedless raisins
- 1 cup chopped mixed candied fruit
- 8 cup gram cracker crumbs
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 2 cup cocktail peanuts, chopped
Directions:
In a bowl combine orange juice, bourbon, molasses, and orange peel. Stir in raisins and candied fruit. Let stand 15 minutes. In a large bowl combine gram cracker crumbs, cinnamon, nutmeg and cloves. Stir in Virginia peanuts and the fruit mixture. Press mixture into a lightly buttered pan. Cover and chill at least one day. Makes two 8-inch loves, four 6 x 3 -1/4 inch loaves, or 24 muffin size.
