Ingredients:

  • 2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup shortening
  • 3/4 cup milk
  • 1/2 cup finely chopped roasted peanuts

Directions:

Sift dry ingredients together, including the finely chopped roasted peanuts. Cut in shortening until mixture is crumbly. Add milk and stir until dough follows fork around bowl. Turn out on lightly floured surface. Knead gently 6 to 8 times. Roll out to about 1/4 inch thickness. Cut with small biscuit cutter. Bake in a preheated 475 degree F. oven for about 7 to 10 minutes until lightly browned. Serve filled with sandwich fillings such as thinly sliced country ham, deviled ham spread, chicken, turkey, beef, cheese, etc. These may be made ahead, partially cooked and frozen. On the day of use, remove from freezer, allow to thaw, and finish baking at 450 degrees F. Yields 24 large (1 1/2 inch) or 48 small biscuits.
